I would almost say the opposite in that I think NMN has helped alleviate anxiety for me.

Granted I didn't start dosing straight on 1g+. But it has had a positive effect on mood overall

I take 13.8 mg/kg bodyweight of NMN for a total of 1000 mg. Personally I can't say i've felt any anxiety while on NMN. Generally there may be a bit of stress/work related anxiety, and even so, none that I can remember recently now.

I have not heard that there was a change to the tablets but you could be right. Quick dissolve time is always nice especially when you are taking a few per day. I've just upped my dose to 6 at once.
